Recipe and a Round-Up

Sometimes, I love sweets. I mean really love them.  Lately, I’ve been craving cupcakes.  Not a likely craving for me though.  As a self-proclaimed “Cookie Monster”, cake just doesn’t do it for me.  However, after seeing a cupcake “Throwdown with Bobby Flay” and watching unlimited episodes of “Cake Boss” and “DC Cupcakes”, my sweet tooth was raging. 

Thanks to one of my favorite blogs, “Eat Live Run”, I was able to put together a delicious, and perfectly portioned way to settle my sweet tooth:

Two Bite Mini Cakes

  • 1 cup of flour
  • 3/4 cup of sugar (you could use splenda)
  • 1 cup of milk (I used vanilla soy milk and it was great!)
  • 1/3 cup of vegetable oil
  • 1/3 cup cocoa powder
  • 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 2 tsp vanilla

Combine: sugar, milk, oil and vanilla.  In another bowl, combine: flour, cocoa powder, baking powder, baking soda.  Add dry ingredients to wet slowly. Use the mini muffin tins!  Bake at 350 for 10 minutes. 

Super Simple Buttercream Frosting

  • 1 stick of room temp butter
  • 1/2 stick of butter flavored Crisco
  • 3 – 4 cups powdered sugar
  • 1.5 tsp of vanilla
  • 2 Tbsp milk

Cream the butter, Crisco, and vanilla together.  Add sugar one cup at a time.   Add milk last.

I don’t have a fancy schmancy cake decorator, so I used a large Ziploc bag, put the icing into it, cut the tip and went to town.  It’s a little more rustic, but its still nicer than just spreading 🙂

Oats and a Visitor

This morning started out great!  I got up early (thought I had to be in lab only to find out that lab was cancelled), and made a delicious breakfast to kick start my Saturday 🙂

No Bake Cookie Oatmeal

  • 1/2 cup old-fashioned oats
  • 1 1/4 cup of milk
  • 2 tsp flax meal
  • 1 tsp cocoa
  • 1 Tbsp raisins
  • 2 tsp brown sugar
  • toppings: coconut, peanut butter and crumbled graham crackers

Cook oatmeal according to package with milk instead of water on the stovetop. I have found that oatmeal tastes better and has a much more appealing texture when cooked on the stovetop.  Once you add the oats, add flax meal, cocoa, raisins, and brown sugar.  Continue to cook.  Then add toppings.  Enjoy.

This only serves 1 person, so you can double, triple, quadruple as needed.  I wouldn’t recommend making more than 4 servings at once.

Charlie Chronicles Part II

He waits for me to come home…and usually he will tell me everything that he did that day.  Sleep…eat….sleep….eat

He likes tissue paper.  For a mellow cat, he loves to play!

His favorite spot in the apartment is the sliding glass door.  He’s got a comfy rug to lay on and watch all the squirrels in the back yard.

His most playful time is night.  Sometimes he brings Mr. Mouse to bed.  I usually hide it under my pillow to get him to sleep.

He is fascinated by the tub.  It makes gurgly noises when it drains, so he will get in and just stare it….for hours.

He’s very cuddly.  I like to say that Charlie and I are watching Greys Anatomy, but really I’m watching Greys and Charlie is snoozing.

I call this “The Superman”.  He likes to sleep with his arms stretched out. 

Today, Charlie went crazy!  Because, we had a visitor:

Brain Food and Fun

So, yesterday our class was given a take home exam.  You are probably thinking “Oh great!  Take home…open note!  open book!”  And you would be correct in those assumptions, however if they gave us the exam to take home, how hard are they going to make this thing?!?!

Guess how long the exam was?  4 pages!  Yep FOUR!  The first question took me 5 hours to complete.  Needless to say proper fueling was needed 🙂

Before tackling the exam, I drank the most delicious “green monster”.  Ok so it wasn’t green, but it definitely had green in it.

Chocolate Covered Strawberry Green Monster

  • Frozen Spinach
  • Frozen Strawberries
  • 1 container of 0% Chobani Strawberry Greek Yogurt
  • Light Chocolate Soy Milk
  • 1 banana
  • 1 scoop of Amazing Grass Chocolate
  • 1 TBSP flaxseed

Soooo good!  Too bad I was still sweaty from my run and it made me shiver.

The new Kings of Leon CD and all my books helped me through the exam.  I had a lot of Green Mountain coffee from my Keurig (the love of my culinary life).

I also love Blue Diamond almonds, the cinnamon brown sugar variety.  They come in these great bottles, which let you know when you have had 1 oz (an exact portion).  Also the cap holds about an ounce so you can just dump and munch.  Almonds are a great go to snack for people on the go.  They keep you full and supply fiber and protein.  I keep these in my backpack or on my desk for when I feel a hunger pang 🙂

Then look what came for me today as I was just starting to complete the exam!?  A wonderful package from Mom and Dad for me and Charlie.  Yes even Charlie got a Halloween treat!

I have never seen these granola bars before, but with my pumpkin obsession, they should satisfy any craving.  I’ll let you now how they are when I pop them open (I’m still full from lunch).

Sweet Cajun Trail Mix from Archer Farms (aka Target) is addictive, so I don’t pick it up all that often.  I haven’t had this yummy snack since the spring, so I’m glad Mom and Dad thought of sending some…my hands ripped into it immediately.

Mom wraps things up in the cutest way!  Even Charlie’s kitty snacks were wrapped in a sweet pumpkin bag.

I think that when you take exams it is a free pass for chocolate.  Like a get out of hell jail free card.

Charlie was very patient and watched over the pumpkins while I completed my exam.  But when he found his treats in the box from home and discovered the wonder of tissue paper….well all “H E double hockey sticks” broke out.

He pooped himself out. Now he’s napping as I write this post. 

 

I made the most delicious sandwich for lunch (more brain fuel) and I’m still full from it (2.5 hours later!)

Pear, Asiago, and Veggie Burger Panini

  • 1/2 pear sliced thin
  • shredded Italian cheeses
  • honey mustard
  • veggie burger (I like Morningstar)
  • 1 whole grain sandwich bun

On the bottom half of the sandwich, put enough shredded cheese to cover the bottom, and then layer on the pear.  The heated veggie burger goes next.  More cheese on top of that (as much as you want).  Spread honey mustard on the top of the bun.  Put the sandwich together and put into a panini press.  Cut in half and ENJOY!

Country Roads, Take Me Home

So I may not be traveling by car, but tomorrow I’ll be flying home!  🙂

I’m almost packed and I have all my PSU stuff ready to go!

Charlie thinks that he’s coming too.  I feel so bad for the poor guy, he doesn’t know that he’ll be by himself for about 48 hours (plenty of water, food, and litter will be provided until Chris can come visit and check on him).  He’s the neediest cat I’ve ever met.  Currently, he has made residence in the suitcase.  If he didn’t meow so much, I’d shut the bag (leave a small gap for air) and just take him with me!

 

I have a yummy bite to share with you.  I’ve seen these on many blogs before and decided to try them myself.

“Cupcakes”

I was writing my list of things that I need to pack and used these to fuel me through the last stages of packing.

Slice an apple in half sideways.  I used a melon baller to cut out the middle.  Top with your fav nut butter and toppings.  I used chocolate chips, but you can use berries, flaked coconut, or I’ve seen pumpkin on a few!

Wish List

  • Since writing this blog, I have started to really enjoy photography.  The angles, lighting, and colors fascinate me.  So of course this would then appear on my list:

I’ve done some research and this seems to be the best for a “cheaper” DSLR.

  • Cycling shoes!  Yes I’ve been teaching spin for a about 2 years now and am just now realizing what a huge mistake I am making in not having shoes that clip.  Must do research and buy shoes.
  • the new iPod Nano in Pink of course.  I have a feeling my iPod is going to take its last breath soon (I wear it out by the amount of exercise I do).  The new nano has a clip which is perfect for active folks 🙂

  • Enough said..I want one!

  • Lululemon Speed Shorts – Yes I’ve been wanting plaid running shorts, but who wouldn’t!! sooooo cool 🙂

 

  • Yogitoes Skidless Yoga Mat – the only thing hindering me from going back to hot yoga is that I feel like I’m going to fall on my face from the sweat hehe

 

So I will start my budgeting and hopefully I will be able to financially discipline myself to acquire a few things on my list! :)  Where is Suze Orman when you need her?
