Good Finds

I love when I find new foods


I started my morning off with some peanut butter toast thanks to Trader Joes Sprouted Wheat bread.  60 calories per slice, 3 g of fiber, and 5 g of protein.  It had a simple ingredient list: Sprouted wheat, wheat flour, water, honey, wheat gluten, yeast, molasses, and salt.  I believe its good to eat foods that you can not only identify all the ingredients but also pronounce them.

Classes went fine today.  Jujin and Yumi took my picture on their iPhone today.  They have an app that matches your facial characteristics with famous Korean actresses, actors, etc…  I look like a 51 year old beautiful Korean actress according to the app.   Yumi couldn’t stop laughing!  They’re too cute.

Lunch didn’t disappoint.  It was also a great find and combo:


V8 Golden Butternut Squash Soup + Amy’s Organic Chunky Tomato Bisque

It’s a 1:1 ratio, nuke it, top with crackers, parm, or croutons.


I had some more Great Harvest bread on the side.  The bread may be expensive, but there is A LOT in that loaf 🙂

Charlie had to go see the vet today.  I have battle wounds from trying to get him in his “house”.  I think he was worried I was going to get rid of him.  His previous owner gave him up because the new cat didn’t like Charlie (awful person.)  It broke my heart to see him shake the whole way.  But the vet was super nice and Charlie seemed to like him.  Thank goodness, phew.


The rest of the afternoon looked like this (intermixed with chatting with my Shawna-na-na!  Miss ya sweetie, can’t wait for the Turkey Trot).  Stat homework, reviewing Biochem notes, and Tweetdeck hehe


Stacy’s Pita Chips and a large honeycrisp apple fueled me. 


Can you see all the delicious cinnamon sugar on that puppy?  mmm mmm satisfies the salty and sweet cravings.  Get a bag…you won’t be disappointed.  Trust me 😉

Pie For One Please!

This may be one of the simplest recipes that I’ll ever post, but they are delicious.

Have you ever wanted a piece of homemade pie but didn’t want to bake and ENTIRE PIE just for yourself??  It seems silly, because your craving for a piece of pie is probably only going to last about a day or two and then you have all this pie sitting around, staring at you, saying “you’re such a wasteful person”. 

Ok…Ok…so pies don’t actually talk.  But, still I’m sure a lot of people would prefer perfectly portioned concoctions especially when they are single or live by themselves or have a small family.

So I bring to you:

Your Personal Apple Pie


  • 2 large apples
  • 3 TBSP sugar
  • 1.5 tsp cinnamon
  • 1 pie crust (homemade or bought)

That’s all you need my friends.  Simple eh?

Find a glass that has a very large rim.  Yes, I chose a margarita glass 🙂


Cut out 3 small pie crusts from the original.


Peel and core your apples.  Slice them thin. Toss them with the cinnamon and sugar.


Preheat the oven to 425.

Spray your muffin pan.  And start assembling:


Line each tin with a mini pie crust.  Layer in your apples.


I did a cross hatch design on two and left one topless (soooo scandalous!)


Bake at 425 for 20 minutes or until the crust turns golden brown.

I let mine cool for about a half hour.  They were super easy to get out of the pan.


Heat when ready and serve with a little warm caramel sauce…if that’s your thang 🙂

I ate two (not at the same time) and shared one.  Now my apple pie craving is blasted and I have wasted none!  Perfecto!

Hope you enjoy these little sweeties.  Bake a bunch and take to a party, or just bake a few and enjoy them yourself.  Remember, everything in moderation (even pie!)
