A Birthday Bash

So the past few days I have not only been in “new year of school mode” but also “happy birthday” mode.  So Happy Birthday Mom!  Today is her 50th Birthday, and I had such a good time celebrating with her and my Aunt Brenda!

We got manis/pedis and had a beautiful day to celebrate.  It was 82 degrees, no humidity, and sunny!  The big man in the sky was definitely smiling down on us today.

I made a wonderful birthday cheesecake.  I know what you are thinking “Cheesecake on a healthy living blog!?!?! Outrageous!”  But I believe in never depriving yourself and always living within moderation.  So I hope this aids in your holistic approach to health.

Here is the recipe for the wonderful cheesecake recipe (courtesy of www.kraftfoods.com)

Rocky Road No-Bake Cheesecake

Mom and Her Birthday Cheesecake!

Yep that’s right!  NO BAKE!!! No oven = no heat = wonderful for the summer 🙂


3 squares Ghirardelli Semi-Sweet Chocolate, divided
2 pkg.  (8 oz. each)  Cream Cheese, softened (I used 2 reduced fat packages)
1/3 cup Sugar
1/4 cup  Milk (soy or almond milk can be substituted)
2 cups thawed  Whipped Topping
3/4 cup  Miniature Marshmallows
1/3 cup chopped peanuts, cashews, or almonds (I used cashews! yum)
1 chocolate Pie Crust (6 oz.)

MICROWAVE 1 of the chocolate squares in small microwaveable bowl on HIGH 1 min; stir until chocolate is completely melted. Set aside.

BEAT cream cheese, sugar and milk in large bowl with electric mixer on medium speed until well blended. Add melted chocolate; mix well. Gently stir in whipped topping, marshmallows and peanuts. Coarsely chop remaining 2 chocolate squares; stir into cream cheese mixture. Spoon into crust.

REFRIGERATE 4 hours or until set. Store leftover pie in refrigerator.

So tonight or tomorrow, grab something indulgent.  Just a little.  Really enjoy it.  And then reflect on all the wonderful events, people, places, and ideas that have brought you to this place in your life.  That’s what birthdays are really about: the reflection of our path and our journey.  Be thankful, for life is good.  Be happy world!
